
Golden potato farl rounds topped with creamy, whipped brie, sweet-and-savoury maple bacon, and crunchy pecans. A decadent, festive bite perfect for ringing in the New Year!

1. Toast the potato farls in a toaster or under the grill until golden and crisp. Leave to cool slightly so they’re easier to cut.
2. Using a small cookie cutter (about 5cm), cut each farl into bite-sized rounds. You should get 2 rounds from each farl.
3. Cook the bacon in an air fryer at 180°C for 6–8 minutes, or under the grill for 8–10 minutes, until nearly crisp. Brush or drizzle with maple syrup, then cook for 1 more minute until glossy and caramelised. Transfer to kitchen paper to cool, then cut into small pieces.
4. Roughly chop a small handful of pecans and toast them in a frying pan over medium heat for 4-5 minutes, stirring often until fragrant and slightly golden.
5. Place the softened brie in a bowl (discarding the rind). Add 1 tablespoon of milk at a time, along with a generous pinch of black pepper. Beat with a whisk or hand mixer until light, smooth, and spreadable. Taste and adjust seasoning as needed.
6. Spread a small amount of cranberry jam on each farl round. Top with a spoonful or piping of whipped brie, a piece of maple bacon, and a few toasted pecan pieces.
7. Arrange the blinis on a serving platter. Scatter with fresh thyme or rosemary leaves for a festive finish & serve!
